These are the portions I used in the video, please be sure to adjust as necessary and eat according to YOUR body’s needs 🙂
* Note: items that don’t have measurements = you can put as much as you care for

Quinoa Bowl #1
2-3 cups Mixed Field Greens + Butter Lettuce
3/4 cup Mixed Cooked Quinoa
1/4 cup Cucumber
Red Onion
3/4 cup White Beans
Assorted Sliced Bell Peppers
1 heaping Tbsp. Your Choice Hummus
Kalamata Olives
1-2 Tbsp. Raw Sunflower Seeds
Dressing of choice
* I ate this with the GREEK dressing from Primal Kitchen, but my go to home made dressing (Dijon mustard, maple syrup, and lemon) would taste great as well!

Fruity Quinoa Salad (#2)
2-3 cups Kale
1/2 cup Parsley, chopped
1/2 cup Mixed Quinoa
3/4 cup Roasted Brussel Sprouts
1/2 Sliced Beets
1/2 cup Grapes
1/2 Apple, cubed
2-3 Tbsp. Raw Pumpkin Seeds
Dressing of Choice or try the Pomegranate Apple Cider Vinegar from Aldi

Vegan Cobb Salad #3
2-3 cups Mixed Field Greens
1/3 cup Beets, sliced
1/2 cup Green Beans, steamed
1/3 cup Mixed Quinoa
1/4 cup Avocado, cubed
1/3 cup Garbanzo Beans
1/3 cup Cucumber, diced
1-2 Tbsp Slivered Almonds
1-2 Tbsp Raw Sun Flower Seeds
Dressing of Choice or try the Tahini Goddess from Aldi
