We Learn to Cook – Spicy Mexican Rice Rolls


Here’s a delicious recipe for a meal for your family or your guests. Give them a fiesta with this zesty Mexican dish that is prefect for parties.

Learn to Cook:
Spicy Mexican Rice Rolls

(serves 4)

What you will Need:
1 large saucepan
1 small pot
1 mixing spoon
1 small bowl
1 large baking pan
1 chopping knife
1 fork
1 barbecue brush (to spread the egg wash)

4 flour tortillas
1 green bell pepper
1 red bell pepper
1 cup of rice
1 can of red sauce
1 can of corn
1 egg
cooking oil
Cajun spice


Boil rice in a small pot with 2 cups of water for 15 minutes. Prepare the saucepan by placing a palm sized drop of cooking oil into the pan and setting it on high heat on the stove top. Next dice the red and green bell peppers and put them into the pan. Add the corn to the pan. When the rice is ready add it to the pan as well. Then pour in the red sauce and add a hint of each spice depending on how spicy you want your Spicy Mexican Rice Rolls to be. Then prepare your egg wash: get a small bowl and beat the egg with a fork (spice may also be added to the egg wash if desired). Next spread the tortillas on a baking sheet and place a spoon of the zesty rice from the saucepan to each tortilla. Use the barbecue brush to spread the egg wash across the edges of each tortilla to seal them (if this proves ineffective place a toothpick in the center of each tortilla but remember to remove the toothpick after baking, especially if you are serving to small children). Finally, place the rolled tortillas in the baking pan the put the pan in the oven on 350 degrees F from about 30 minutes. Let cool and enjoy! Goes great with a side of salsa for dipping!
